Day Off Breakfast

I am enjoying a blissful 10 days off between jobs, and it has provided an opportunity to have more fun in the kitchen than ever!

This morning I was especially hungry and wanted something reminiscent of my beloved “potatoes and eggs” from my childhood. I decided to use, what else, CAULIFLOWER, and came up with the following 100 calorie treat.

CAULI-AND EGGS

Coconut or Olive Oil Cooking Spray

1/2 package frozen riced cauliflower, cooked

1/2 cup Egg Beaters original

Chopped tomatoes and basil for garnish

Hot sauce, salt and pepper, onion or garlic powder, optional


Spray a ceramic pan with cooking spray. Saute the riced cauliflower until slightly browned, add Egg Beaters, and scramble. Top with chopped tomatoes and basil and season with optional seasonings, to taste. 100 calories, 4 net carbs.
