Pumped Up Pasta

Perfect for a Sunday Night Meal.

In keeping with our theme of calorie cutting, the challenge for dinner is usually, for me, getting enough food so I’m not hungry in the middle of the night. This dish is packed with protein and fiber, and is a relative calorie bargain at 250 calories.

PUMPED UP PASTA

1/4 lb. 93% lean grass fed ground beef (organic if possible),

1 cup cooked riced cauliflower

1 package new formula Miracle Noodle (any shape. we used Fettucine).

1 cup no-sugar marinara (homemade or from a jar. We used Rao’s).

1/2 tsp. oregano

black pepper

fresh basil

1 Tbsp. shredded or grated parmesan

Brown the beef in a skillet and add the riced cauliflower. Saute for about a minute. Add all other ingredients except fresh basil and parmesan. Plate and garnish with basil and parmesan. Makes one HUGE serving.
